Roasted Sweet Potatoes with Herbs is a simple yet flavorful side dish featuring tender, caramelized sweet potato cubes tossed with olive oil, garlic, and a blend of fresh or dried herbs — perfect for weeknight dinners or holiday tables.

  • 1 tsp dried thyme
  • 1 tsp dried rosemary

  • Salt and black pepper to taste
  • 1 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. In a large bowl, toss sweet potato cubes with olive oil, garlic, thyme, rosemary, paprika (if using), salt, and pepper until evenly coated.
  3. Spread the potatoes in a single layer on the prepared baking sheet.
  4. Roast for 30–35 minutes, flipping once halfway through, until sweet potatoes are golden and tender.
  5. Remove from oven and sprinkle with fresh parsley before serving.
