Ingredients

  • 2 cups cooked or canned salmon, flaked and drained
  • 2 large eggs, beaten
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 tablespoons fresh dill, chopped
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil or vegetable oil (for frying)
  • Dill Sauce:
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream or Greek yogurt
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1 small garlic clove, minced (optional)
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, flake the salmon and remove any bones or skin if necessary.
  2. Add onion, dill, garlic, breadcrumbs, eggs, lemon juice, salt, and pepper. Mix well until combined.
  3. Shape the mixture into small patties (about 8).
  4. Heat oil in a skillet over medium heat.
  5. Cook croquettes for 3–4 minutes per side, or until golden brown and crispy. Drain on paper towels.
  6. Meanwhile, mix all dill sauce ingredients in a bowl until smooth and creamy.
  7. Serve croquettes warm with a dollop of dill sauce.
