Decadent no-bake salted caramel pecan bites made with toasted pecans, creamy caramel, and a touch of sea salt for the perfect sweet-salty treat.

Ingredients

  • 1 cup pecan halves, lightly toasted
  • 20 soft caramel candies or 1 cup soft caramel sauce
  • 2 tbsp heavy cream (if using caramel candies)
  • 1/2 tsp sea salt flakes
  • 1 cup dark or milk chocolate, melted
  • 1 tbsp coconut oil (optional, for smoother chocolate)

Instructions

  1. Place toasted pecan halves on a parchment-lined baking sheet in pairs.
  2. In a small saucepan, melt caramel candies with heavy cream over low heat, stirring until smooth. If using caramel sauce, warm gently.
  3. Spoon a small amount of caramel over each pecan pair to form the base.
  4. Freeze for 10 minutes until caramel sets slightly.
  5. Melt chocolate with coconut oil until smooth.
  6. Dip each caramel pecan cluster into the melted chocolate or drizzle chocolate over the top.
  7. Sprinkle lightly with sea salt flakes.
  8. Refrigerate for 20–30 minutes until fully set. Serve chilled or at room temperature.

Notes

  • Use smoked sea salt for added depth.
  • Store in an airtight container for up to one week.
  • Substitute walnuts or almonds if desired.
