These homemade sandwich cookies are soft, chewy, and filled with creamy marshmallow and melted chocolate, making them the ultimate sweet treat!

Ingredients

  • 1 cup peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup marshmallow fluff

 

  • 1/2 cup melted chocolate

Instructions

  • Preheat oven to 350°F. Line a baking sheet with parchment paper.
  • Make the dough: Cream together peanut butter, butter, and sugar. Add egg and vanilla. Stir in flour, baking soda, and salt.
  • Form cookies: Roll dough into small balls, flatten slightly, and place on baking sheet.
  • Bake: Bake for 10-12 minutes until golden brown. Let cool completely.
  • Assemble sandwiches: Spread marshmallow fluff on one cookie, drizzle with melted chocolate, and top with another cookie.

 

  • Chill & serve: Refrigerate for 15 minutes for a firmer texture.

Notes

  • Use store-bought peanut butter cookies for a quicker version.
  • Swap marshmallow fluff for vanilla buttercream for a different filling.
