Skillet Baked Eggs are a wholesome and rustic one-pan dish where eggs are baked over a savory mix of sautéed vegetables, meat, and cheese. Ideal for breakfast, brunch, or light dinner.

Ingredients

  • 46 large eggs
  • 1 tbsp olive oil or butter
  • 1/2 onion, chopped
  • 1/2 cup bell peppers, chopped
  • 2 garlic cloves, minced
  • 1/2 cup cooked bacon or ham, chopped
  • 1/2 cup shredded cheese (cheddar, mozzarella, or blend)
  • Salt, to taste
  • Black pepper, to taste
  • Fresh herbs (parsley, thyme, or chives), for garnish
  • Crushed red pepper flakes (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil or butter in an oven-safe skillet over medium heat.
  3. Add chopped onion and bell peppers; sauté for 4–5 minutes until softened.
  4. Stir in garlic and cooked bacon or ham. Cook for another 2 minutes.
  5. Spread the mixture evenly in the skillet and sprinkle shredded cheese over the top.
  6. Crack eggs on top of the mixture, spacing them out evenly.
  7. Season with salt, pepper, and crushed red pepper flakes if using.
  8. Transfer skillet to the oven and bake for 10–15 minutes, or until eggs are set to your preference.
  9. Remove from oven and garnish with fresh herbs before serving.

Notes

  • Use a cast iron skillet for even heat distribution and rustic presentation.
  • Check eggs after 10 minutes to avoid overcooking.
  • Add a splash of cream over eggs before baking for extra richness.
  • Great with toasted bread or pita on the side.
  • Not recommended for freezing; best enjoyed fresh.
