1 red bell pepper, sliced
1 yellow bell pepper, sliced
2 tbsp olive oil
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp red pepper flakes (optional)
1 tbsp fresh parsley, chopped
1 tbsp fresh basil, chopped
1 tsp fresh thyme leaves
Instructions
Heat olive oil in a large skillet over medium-high heat.
Add the sliced zucchini and bell peppers and sauté for 5–6 minutes until they begin to soften.
Stir in the garlic, salt, pepper, and red pepper flakes, cooking for an additional 1–2 minutes.
Remove from heat and toss with fresh parsley, basil, and thyme.
Adjust seasoning to taste and serve warm.
Notes
For extra flavor, add a squeeze of lemon juice before serving.
