Savory Bacon and Onion Bread is a hearty, flavorful loaf that combines smoky, crispy bacon with the sweetness of caramelized onions in a soft, golden crusted bread. Perfect as a side for soups, stews, or served simply warm with butter.

Ingredients

  • 3 cups all-purpose flour
  • 2 1/4 tsp active dry yeast
  • 1 cup warm water (110°F/45°C)
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 tbsp olive oil or melted butter
  • 6 slices bacon, chopped
  • 1 large yellow onion, thinly sliced
  • Optional: 1/2 cup shredded cheddar or Swiss cheese
  • Optional: 1 tbsp chopped fresh thyme or rosemary

Instructions

  1. In a skillet, cook chopped bacon until crisp. Remove and drain on paper towels. In the same skillet, sauté the onions over medium heat until caramelized, about 15–20 minutes. Set aside.
  2. In a large bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes until foamy.
  3. Add flour, salt, and olive oil to the yeast mixture. Stir until a rough dough forms.
  4. Knead on a floured surface for 8–10 minutes until smooth and elastic.
  5. Gently fold in the bacon, onions, cheese, and herbs if using, mixing until evenly distributed.
  6. Shape the dough and place into a greased loaf pan. Cover and let rise in a warm place for 1 hour, or until doubled in size.
  7. Preheat oven to 375°F (190°C).
  8. Bake for 30–35 minutes, or until the top is golden brown and the loaf sounds hollow when tapped.
  9. Let cool slightly before slicing. Serve warm or at room temperature.

Notes

  • Use red onions for a sharper flavor if preferred.
  • To make rolls instead of a loaf, divide the dough and bake in a muffin tin or baking dish.
  • Add a pinch of chili flakes for a subtle kick.
  • Pairs perfectly with soups, eggs, or grilled sandwiches.
