Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. In a separate bowl, whisk together flour, cocoa powder, baking soda, salt, and finely chopped herbs.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  6. Fold in dark chocolate chunks and dried cherries.
  7. Drop tablespoon-sized scoops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Sprinkle each cookie with a pinch of flaky sea salt.
  9. Bake for 10–12 minutes, or until edges are set and centers are still slightly soft.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
