Savory Corn Fritters with Herb Sauce are crispy, golden patties made from sweet corn, herbs, and a light batter, pan-fried to perfection and served with a zesty green herb sauce — ideal as an appetizer, snack, or side dish.

Ingredients

  • 2 cups fresh or frozen corn kernels (thawed if frozen)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/2 tsp baking powder
  • 2 eggs
  • 1/4 cup milk
  • 2 green onions, finely sliced
  • 1/4 cup chopped fresh herbs (parsley, cilantro, or dill)
  • Salt and pepper to taste
  • Vegetable oil, for frying
  • For the herb sauce:
  • 1/2 cup Greek yogurt or sour cream
  • 2 tbsp chopped fresh herbs (basil, parsley, cilantro, or a mix)
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, whisk together flour, cornmeal, baking powder, salt, and pepper.
  2. In a separate bowl, beat the eggs and milk. Stir in corn, green onions, and chopped herbs.
  3. Add wet ingredients to the dry ingredients and mix just until combined.
  4. Heat about 2 tbsp of oil in a large skillet over medium heat. Drop spoonfuls of batter into the skillet and flatten slightly.
  5. Cook for 2–3 minutes per side, or until golden brown and cooked through. Transfer to a paper towel-lined plate.
  6. To make the herb sauce, combine yogurt, herbs, garlic, lemon juice, salt, and pepper in a small bowl. Mix until smooth.
  7. Serve fritters warm with the herb sauce on the side or drizzled over top.

Notes

  • For extra crunch, let the batter rest for 10 minutes before frying.
  • You can add shredded cheese, diced red pepper, or cooked bacon for variation.
  • Fritters can be kept warm in a 200°F (95°C) oven while frying in batches.
  • Great served as a brunch side, appetizer, or light vegetarian meal.
