12oz fettuccine pasta
1lb (450g) large shrimp, peeled and deveined
2 tablespoons olive oil
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2cup pesto sauce (store-bought or homemade)
1/4cup grated Parmesan cheese
1/4cup pasta cooking water (reserved)
Fresh basil leaves for garnish (optional)
Instructions
Cook fettuccine according to package instructions until al dente. Reserve 1/4 cup of pasta water, then drain and set aside.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds.
Add shrimp, salt, and pepper. Cook 2–3 minutes per side, or until shrimp are pink and opaque. Remove from heat.
Return cooked pasta to the pot or a large mixing bowl. Stir in pesto sauce and reserved pasta water to coat.
Add cooked shrimp and toss gently to combine.
Sprinkle with Parmesan cheese and garnish with basil if desired.
Serve warm.
Notes
Use fresh or frozen shrimp—just thaw completely before cooking.
Homemade pesto adds a fresher flavor but store-bought works well too.
Add cherry tomatoes or spinach for extra color and nutrients.
