6yellow bell peppers
12 large shrimp, peeled and deveined
1cupcream cheese, softened
1/2cupshredded mozzarella cheese
2 tbspbutter
1 tspgarlic powder
1/2 tspblack pepper
1 tbspfresh parsley, chopped
Instructions
Preheat oven to 375°F (190°C).
Prepare the peppers – Cut off the tops of the bell peppers and remove the seeds.
Make the filling – In a bowl, mix cream cheese, mozzarella, garlic powder, and black pepper.
Stuff the peppers – Fill each bell pepper with the cheese mixture and place one shrimp on top.
Bake for 15-20 minutes until the cheese is bubbly and slightly golden.
Garnish with fresh parsley and serve hot!
Notes
For a spicier kick, add 1/2 tsp red pepper flakes to the filling.
