These shrimp-stuffed bell peppers are filled with a creamy, cheesy mixture and baked to perfection, making them an irresistible appetizer or main dish!

  • 6 yellow bell peppers
  • 12 large shrimp, peeled and deveined
  • 1 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp butter
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 tbsp fresh parsley, chopped

Instructions

  • Preheat oven to 375°F (190°C).
  • Prepare the peppers – Cut off the tops of the bell peppers and remove the seeds.
  • Make the filling – In a bowl, mix cream cheese, mozzarella, garlic powder, and black pepper.
  • Stuff the peppers – Fill each bell pepper with the cheese mixture and place one shrimp on top.
  • Bake for 15-20 minutes until the cheese is bubbly and slightly golden.
  • Garnish with fresh parsley and serve hot!

Notes

  • For a spicier kick, add 1/2 tsp red pepper flakes to the filling.
  • Can be served as an appetizer or main dish.
  • Swap shrimp for crab meat or mushrooms for a different twist.
