Skillet Baked Eggs are a hearty, one-pan breakfast made with eggs, sautéed vegetables, cheese, and optional meats, all baked to perfection in an oven-safe skillet. Easy, customizable, and full of flavor.

Ingredients

  • 4 large eggs
  • 1 tbsp olive oil or butter
  • 1/2 cup diced onion
  • 1 garlic clove, minced
  • 1/2 cup chopped cooked ham or bacon
  • 1/2 cup diced bell peppers
  • 1/2 cup shredded cheese (cheddar, mozzarella, or blend)
  • Salt, to taste
  • Black pepper, to taste
  • Fresh herbs (parsley or chives), optional for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil or butter in an oven-safe skillet over medium heat.
  3. Sauté onions and bell peppers for about 5 minutes until softened.
  4. Add garlic and cooked ham or bacon; cook for another 2–3 minutes.
  5. Sprinkle shredded cheese evenly over the mixture in the skillet.
  6. Make small wells and crack one egg into each well.
  7. Season with salt and black pepper.
  8. Transfer skillet to oven and bake for 8–12 minutes, depending on preferred egg doneness.
  9. Remove from oven and garnish with fresh herbs if using. Serve hot.

  • Use a cast iron skillet for best results and even heat distribution.
  • Add jalapeños or hot sauce for a spicy version.
  • Try Mediterranean ingredients like spinach, olives, and feta for variation.
