Skillet Chicken Cacciatore is a hearty and rustic Italian dish featuring tender chicken simmered with tomatoes, bell peppers, onions, garlic, and herbs in a single skillet for a flavorful one-pan meal.

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 small onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 1/2 cup chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken thighs with salt and pepper, then sear them skin-side down until browned, about 5-6 minutes per side. Remove and set aside.
  3. In the same skillet, add onion and bell peppers. Sauté until softened, about 5 minutes.
  4. Add garlic and cook for 1 minute until fragrant.
  5. Stir in diced tomatoes, chicken broth, oregano, and basil. Bring to a simmer.
  6. Return chicken to the skillet, nestling it into the sauce.
  7. Cover and simmer for 30 minutes, or until chicken is cooked through and tender.
  8. Uncover and simmer for an additional 5-10 minutes to thicken the sauce, if desired.
  9. Garnish with fresh parsley before serving.

Notes

  • Use boneless chicken if preferred, but adjust cooking time accordingly.
  • Serve over pasta, rice, or with crusty bread.
  • Olives or mushrooms can be added for extra depth of flavor.
