A flavorful one-pan chicken dish with juicy roasted tomatoes, melted mozzarella, and fresh herbs. Simple, cheesy, and perfect for a quick dinner.

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 pint cherry tomatoes, halved
  • 1 tsp Italian seasoning
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1 cup shredded mozzarella cheese
  • 2 tbsp fresh basil, chopped (for garnish)

Instructions

  1. Season chicken breasts with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear chicken breasts on each side for 4–5 minutes until golden brown.
  4. Add garlic and cherry tomatoes to the skillet, cooking until tomatoes soften and release juices.
  5. Reduce heat to medium, cover, and let chicken cook through (internal temp 165°F).
  6. Sprinkle shredded mozzarella evenly over the chicken.
  7. Cover skillet for 2–3 minutes until cheese melts.
  8. Garnish with fresh basil and serve warm.
