A bold and hearty stir-fry featuring smoky sausage, tender potatoes, crisp green beans, and sweet bell peppers. This quick one-pan dish delivers layers of flavor and satisfying textures in every bite.

Ingredients

  • 2 smoked sausages (about 8 oz), sliced into rounds
  • 2 medium potatoes, diced
  • 1 cup green beans, trimmed and halved
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 1 tbsp chopped parsley (for garnish)

Instructions

  1. Boil diced potatoes in salted water for 6–8 minutes until just tender. Drain and set aside.
  2. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add sliced sausage and cook for 4–5 minutes until browned. Remove and set aside.
  3. Add remaining 1 tbsp olive oil to the skillet. Sauté onion and garlic for 1–2 minutes until fragrant.
  4. Add green beans and bell peppers. Cook for 5–6 minutes, stirring occasionally, until just tender.
  5. Add cooked potatoes, smoked paprika, thyme, salt, and pepper. Stir well and cook for another 3–4 minutes to crisp up the potatoes slightly.
  6. Return sausage to the skillet and toss everything together. Cook for 1–2 minutes more until heated through.
  7. Garnish with chopped parsley and serve hot.

Notes

  • For extra heat, add chili flakes or sliced jalapeños.
  • Use chicken, turkey, or plant-based sausage to fit dietary needs.
  • Parboil potatoes ahead of time to speed up prep.
