A Southern-inspired side dish featuring tender green beans simmered with tomatoes, onions, and garlic, then finished with a savory sprinkle of Parmesan cheese.

Ingredients

  • 1 lb fresh green beans, trimmed
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic and cook for 1 more minute until fragrant.
  4. Stir in the diced tomatoes with their juices, salt, black pepper, and red pepper flakes if using.
  5. Add the green beans and stir to coat them in the tomato mixture.
  6. Cover and reduce heat to low. Simmer for 20–25 minutes, or until green beans are tender, stirring occasionally.
  7. Remove from heat and sprinkle with Parmesan cheese just before serving.

Notes

  • Use fresh green beans for the best texture, but frozen can be substituted if needed.
  • Adjust red pepper flakes to your heat preference.
  • For a vegan version, omit Parmesan or use a plant-based alternative.
