10 oz (280 g) soba noodles
2 tbsp soy sauce
1 tbsp mirin
1 tbsp rice vinegar
2 garlic cloves, minced
1 tsp sesame oil
1 tbsp vegetable oil
2 scallions, thinly sliced
1 sheet nori (seaweed), cut into thin strips
1 tsp toasted sesame seeds (optional)
Instructions
Cook soba noodles according to package directions until al dente. Drain, rinse under cold water, and set aside.
In a small bowl, whisk together soy sauce, mirin, rice vinegar, garlic, and sesame oil.
Heat vegetable oil in a skillet over medium heat. Add cooked soba noodles and pour in the sauce. Toss to combine and heat through for 1–2 minutes.
Remove from heat and garnish with scallions, seaweed strips, and sesame seeds.
Serve warm or chilled as desired.
Notes
For extra protein, top with a soft-boiled egg or tofu.
Can be served warm for comfort or cold as a refreshing summer dish.
