1lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 tsp chili powder
1/2 tsp cumin
1/2 tsp paprika
Salt and pepper, to taste
4 large flour tortillas
1cup shredded lettuce
1 large tomato, diced
1cup shredded cheese
1/2cup sour cream
2 chipotle peppers in adobo sauce
1 tbsp lime juice
Instructions
In a skillet over medium heat, sauté diced onion and minced garlic until translucent.
Add ground beef and cook until browned, breaking it apart as it cooks.
Season the beef with chili powder, cumin, paprika, salt, and pepper. Stir to combine.
In a blender, combine sour cream, chipotle peppers, and lime juice. Blend until smooth to create the chipotle cream sauce.
Lay out the tortillas and layer with lettuce, diced tomato, seasoned beef, shredded cheese, and a drizzle of chipotle cream sauce.
Fold in the sides of the tortillas and roll up tightly to form burritos.
Serve immediately or store for later.
Notes
Adjust the spice level by varying the amount of chipotle peppers used.
To make vegetarian, use black beans or grilled veggies instead of beef.
Chipotle sauce can be made ahead and refrigerated for up to 3 days.
