Spicy Beef Noodle Soup is a bold and warming dish featuring tender beef, chewy noodles, and a fragrant, spicy broth. It’s ideal for cold days or when you want something comforting with a kick.

Ingredients

  • beef stew meat or flank steak, thinly sliced
  • noodles (egg noodles or udon)
  • beef broth
  • soy sauce
  • ginger, minced
  • garlic, minced
  • chili paste or red pepper flakes
  • green onions
  • vegetable oil
  • bok choy or spinach (optional)
  • fresh cilantro (for garnish)

Instructions

  1. Heat oil in a pot. Sauté garlic, ginger, and chili paste.
  2. Add beef; cook until browned.
  3. Pour in broth and soy sauce. Simmer for 30 minutes.
  4. Cook noodles separately according to package instructions.
  5. Add noodles and greens to broth; simmer briefly.
  6. Garnish with green onions and cilantro. Serve hot.

Notes

  • Use chicken or tofu as a substitute for beef.
  • Adjust spiciness by adding more chili paste or fresh chilies to taste.
  • Feel free to add mushrooms or carrots for extra flavor and texture.
  • Store broth and noodles separately in the fridge for up to 3 days. Reheat gently.
  • Store-bought broth can be used for convenience.
  • For a gluten-free version, use rice noodles and tamari instead of soy sauce.
  • To prevent soggy noodles, add them just before serving.
  • For extra flavor, garnish with fresh cilantro or Thai basil and serve with lime juice.
  • Steamed dumplings or spring rolls pair well as sides.
  • If using a slow cooker, simmer beef and broth on low for 6-8 hours, then cook noodles separately before serving.
