Spicy Buffalo Cauliflower Bites are a crispy, flavorful, and vegetarian-friendly twist on classic buffalo wings. Oven-roasted or air-fried cauliflower florets are tossed in tangy buffalo sauce for a bold, satisfying snack or appetizer.

Ingredients

  • 1 medium head of cauliflower, cut into bite-sized florets
  • 3/4 cup all-purpose flour
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3/4 cup water or milk (dairy or plant-based)
  • 1/2 cup buffalo hot sauce
  • 2 tbsp butter or vegan butter
  • Optional: ranch or blue cheese dressing, for serving
  • Optional: celery and carrot sticks, for garnish

Instructions

  1. Preheat oven to 425°F (220°C) or set air fryer to appropriate temperature.
  2. In a mixing bowl, whisk together flour, garlic powder, onion powder, paprika, salt, pepper, and water or milk until smooth.
  3. Dip cauliflower florets into batter, coating evenly.
  4. Place coated florets on a parchment-lined baking sheet or in air fryer basket without overcrowding.
  5. Bake or air fry for 20–25 minutes, flipping halfway through, until golden and crisp.
  6. In a saucepan, melt butter and stir in buffalo sauce until combined.
  7. Toss baked cauliflower in buffalo sauce to coat evenly.
  8. Return coated florets to oven or air fryer for an additional 10 minutes to caramelize and crisp.
  9. Serve hot with ranch or blue cheese dressing and celery and carrot sticks.

Notes

  • Use gluten-free flour for a gluten-free version.
  • Add panko breadcrumbs after battering for extra crunch.
  • Adjust spice level by choosing mild or extra hot buffalo sauce.
  • Best served fresh for maximum crispiness.
