8oz rotini pasta (or any short pasta)
1lb shrimp, peeled and deveined
1 tbsp Cajun seasoning
1 tbsp olive oil
1/2cup cherry tomatoes, halved
1/2cup bell peppers (yellow and red), diced
1/4cup red onion, diced
1/2cup cucumber, chopped
2 tbsp fresh parsley, chopped
Instructions
Cook the pasta: Boil pasta according to package directions. Drain and rinse with cold water.
Cook the shrimp: Toss shrimp with Cajun seasoning. Heat olive oil in a skillet and cook shrimp for 2-3 minutes per side. Set aside.
Make the dressing: Mix all dressing ingredients in a bowl until smooth.
Assemble the salad: In a large bowl, combine pasta, shrimp, tomatoes, bell peppers, onion, and cucumber.
Add dressing: Pour the dressing over the salad and toss well.
Chill & serve: Refrigerate for 30 minutes before serving for best flavor.
Notes
Adjust the spice level by adding more or less Cajun seasoning.
