Ingredients

Units Scale
  • 1 can (400g) chickpeas, drained and rinsed
  • 1/2 red onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup grated carrot
  • 1/4 cup chopped fresh cilantro or parsley
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1 tablespoon soy sauce or tamari
  • 1 tablespoon lemon juice
  • 1/2 cup breadcrumbs (use gluten-free if needed)
  • 2 tablespoons flour (or chickpea flour for gluten-free)
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for cooking)
  • 4 burger buns
  • Lettuce, tomato, onion, pickles, and condiments for serving

Instructions

  1. In a mixing bowl, mash chickpeas with a fork or potato masher until mostly smooth with some chunks remaining.
  2. Add onion, garlic, carrot, herbs, spices, soy sauce, and lemon juice. Mix well.
  3. Stir in breadcrumbs and flour. Mix until a firm dough forms. Adjust consistency with more breadcrumbs or water if needed.
  4. Form mixture into 4 equal-sized patties.
  5. Heat olive oil in a skillet over medium heat. Cook patties for 4-5 minutes per side until golden brown and heated through.
  6. Toast burger buns if desired. Assemble burgers with patties, lettuce, tomato, onion, pickles, and condiments of choice.
  7. Serve hot and enjoy.

Notes

  • Patties can be made ahead and refrigerated or frozen.
  • For a spicier burger, add extra cayenne or chopped jalapeño.
  • Great with vegan mayo, sriracha, or avocado as toppings.
  • Grill patties using foil or a grill mat to prevent sticking.
