Sweet, spicy, and buttery, this Spicy Jalapeño Honey Cornbread is the perfect blend of heat and sweetness. A golden, moist cornbread infused with jalapeños, honey, and corn for a flavorful side dish.

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2 eggs
  • 1/4 cup melted butter
  • 1/4 cup honey
  • 1 cup corn kernels (fresh or canned)

 

  • 2 jalapeños, sliced

Instructions

  • Preheat the oven to 375°F (190°C). Grease a baking dish.
  • In a bowl, mix cornmeal, flour, baking powder, and salt.
  • In another bowl, whisk buttermilk, eggs, butter, and honey.
  • Combine wet and dry ingredients. Fold in corn and jalapeños.
  • Pour into the dish and bake for 25-30 minutes.

 

  • Drizzle with extra honey before serving.

Notes

  • For extra spice, leave jalapeño seeds in.

 

  • Serve warm with butter and a drizzle of honey.
