Spicy Jalapeño Popper Grilled Cheese is a fiery twist on a comfort food classic, layering cream cheese, melty cheddar, jalapeños, and buttery toasted bread into a bold, satisfying sandwich.

Ingredients

  • 2 slices bread (sourdough, white, or brioche)
  • 2 tbsp cream cheese, softened
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup shredded mozzarella or Monterey Jack cheese
  • 46 slices fresh or pickled jalapeños
  • 1 tbsp butter or mayonnaise (for grilling)
  • Optional: pinch of garlic powder
  • Optional: 2 slices cooked bacon
  • Optional: 1 tsp chopped green onions

Instructions

  1. In a small bowl, mix softened cream cheese with garlic powder if using.
  2. Spread the cream cheese mixture on one slice of bread.
  3. Layer with shredded cheddar, mozzarella or Monterey Jack, jalapeño slices, and bacon or green onions if using. Top with the second slice of bread.
  4. Spread butter or mayonnaise on the outer sides of the sandwich.
  5. Heat a skillet over medium heat. Cook sandwich 3–4 minutes per side, pressing gently, until golden brown and the cheese is melted.
  6. Slice and serve hot. Optional: garnish with more green onions or serve with dipping sauce.
