Ingredients

  • 1 tablespoon olive oil (if needed)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups small pasta (elbow macaroni or shells)
  • 2 cups beef broth
  • 1 cup milk or cream
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • Salt, to taste
  • 1/2 cup shredded Irish cheddar (optional)
  • Fresh parsley, chopped (optional garnish)

Instructions

  1. In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat if needed.
  2. Add diced onion and cook for 3–4 minutes until softened. Stir in garlic and cook for 1 minute more.
  3. Add pasta, beef broth, milk, thyme, salt, and pepper. Stir to combine and bring to a gentle boil.
  4. Reduce heat, cover, and simmer for 10–12 minutes, stirring occasionally, until the pasta is tender and liquid is mostly absorbed.
  5. Stir in peas and cook uncovered for another 2–3 minutes until heated through.
  6. Optional: Stir in shredded cheese until melted and creamy.
  7. Garnish with fresh parsley if desired and serve warm.
