4–6 bone-in, skin-on chicken thighs
2 tbsp olive oil or melted butter
1/3cup honey
3 tbsp soy sauce or tamari
3 garlic cloves, minced
1 tsp Dijon mustard (optional)
1 tbsp apple cider vinegar or lemon juice
Salt & freshly ground black pepper, to taste
1/2 tsp smoked paprika (optional)
1/4 tsp chili flakes (optional)
Instructions
Preheat oven to 200 °C (400 °F).
In a bowl, whisk honey, soy sauce, garlic, mustard, vinegar or lemon juice, olive oil, salt, pepper, paprika, and chili flakes if using.
Place chicken thighs in a baking dish and pour half the marinade over them. Turn to coat thoroughly. Reserve remaining marinade.
Bake chicken for 25 minutes, skin side up.
Brush with reserved marinade, return to oven, and bake an additional 10–15 minutes, until chicken reaches 75 °C (165 °F).
Optional: Broil for 2–3 minutes for extra caramelization—watch closely.
Spoon pan juices over thighs and serve hot with your choice of sides.
