Tender chicken breasts are filled with a savory mixture of spinach, cream cheese, and mozzarella, then baked to perfection. A flavorful and satisfying dish that’s perfect for low-carb or keto-friendly meals.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Toothpicks or kitchen twine for securing

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, heat olive oil and sauté garlic until fragrant, about 30 seconds. Add spinach and cook until wilted. Remove from heat.
  3. In a bowl, combine cooked spinach, cream cheese, mozzarella, Parmesan, salt, and pepper. Mix until well combined.
  4. Cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
  5. Fill each chicken breast with the spinach-cheese mixture and secure with toothpicks or twine.
  6. Season the outside of the chicken with Italian seasoning, salt, and pepper.
  7. Place in a greased baking dish and bake for 25–30 minutes, or until chicken reaches 165°F (74°C).
  8. Let rest for 5 minutes. Remove toothpicks or twine before serving.

Notes

  • Frozen spinach can be used if thawed and well-drained.
  • Try adding chopped sun-dried tomatoes or cooked bacon to the filling for extra flavor.
  • This dish pairs well with cauliflower mash, roasted veggies, or a crisp salad.
