Sweet Potato Nachos with Ground Beef and Jalapeño Cheddar are a vibrant, healthy twist on traditional nachos. Thinly sliced, roasted sweet potatoes replace chips as the base, topped with seasoned beef, spicy cheese, and fresh garnishes for a delicious, crowd-pleasing dish.

  • 2 large sweet potatoes, thinly sliced
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 lb ground beef
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder or smoked paprika
  • 1 cup shredded jalapeño cheddar cheese
  • 1/4 cup red onion, diced
  • 1/2 cup cherry tomatoes, halved
  • 2 tbsp fresh cilantro, chopped
  • Sour cream or Greek yogurt (optional, for serving)
  • Jalapeño slices (fresh or pickled, to taste)

Instructions

  1. Preheat oven to 400°F (200°C). Slice sweet potatoes thinly and toss with olive oil, salt, and pepper.
  2. Spread slices on a baking sheet in a single layer and roast for 20–25 minutes, flipping halfway, until golden and crisp.
  3. Meanwhile, cook ground beef in a skillet over medium heat. Add garlic powder, onion powder, chili powder, salt, and pepper. Cook until browned and fully cooked.
  4. Arrange roasted sweet potato slices on a baking sheet or oven-safe dish. Top evenly with the cooked beef and shredded jalapeño cheddar.
  5. Return to oven for 5–7 minutes until the cheese is melted and bubbly.
  6. Remove from oven and garnish with red onion, cherry tomatoes, cilantro, and jalapeño slices. Serve with sour cream or Greek yogurt if desired.
