1 baguette, sliced into 1/2-inch pieces
2 tbsp olive oil (for brushing bread)
4 ripe tomatoes, diced
2 cloves garlic, minced
1/4cup chopped fresh basil
1 tbsp balsamic vinegar (optional)
2 tbsp extra virgin olive oil (for tomato mixture)
Salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C).
Brush baguette slices with olive oil and place on a baking sheet.
Toast in the oven for 5-7 minutes until golden and crisp. Remove and let cool slightly.
In a bowl, combine diced tomatoes, garlic, basil, balsamic vinegar (if using), extra virgin olive oil, salt, and pepper. Mix well and let sit for 10 minutes to blend flavors.
Spoon the tomato mixture onto the toasted bread just before serving.
Serve immediately as an appetizer or snack.

Use the freshest tomatoes and basil for the best flavor.
You can rub the toasted bread with a raw garlic clove for extra garlic flavor.
