Tomato Chicken is a flavorful and comforting dish made with tender chicken simmered in a creamy tomato sauce seasoned with herbs and spices. It’s quick, versatile, and perfect for pairing with rice, pasta, or bread.

Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts, cut into chunks
  • 2 tbsp olive oil or butter
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes or tomato puree
  • 1/2 cup heavy cream or coconut cream
  • 1 tsp dried basil or Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika (optional)
  • 2 tbsp fresh parsley or basil, chopped (for garnish)

Instructions

  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Add chopped onions and sauté for 3–4 minutes until translucent. Stir in garlic and cook for another minute.
  3. Add chicken pieces and cook until browned on all sides, about 5–7 minutes.
  4. Stir in crushed tomatoes, salt, pepper, and herbs. Reduce heat and simmer for 15–20 minutes until the chicken is fully cooked.
  5. Stir in heavy cream and paprika (if using), then simmer for another 5 minutes until the sauce is creamy and heated through.
  6. Adjust seasoning if needed and garnish with fresh herbs.
  7. Serve hot over rice, pasta, or with crusty bread.

Notes

  • Use thighs for juicier results; breasts are leaner and cook faster.
  • To prevent curdling, add cream after reducing heat.
  • Add spinach or zucchini to make it a more complete meal.
  • This dish freezes well and is great for meal prep.
  • For extra depth, add a splash of white wine or chicken broth before the tomatoes.
