Crust:

  • 2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted

Cheesecake Filling:

  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup caramel sauce

Turtle Topping:

  • 1/2 cup heavy cream
  • 1/2 cup dark chocolate chips
  • 1/2 cup caramel sauce
  • 3/4 cup toasted pecans, chopped
  • 1/2 cup chocolate chunks

Instructions

  • Prepare the crust: Mix cookie crumbs with melted butter and press into a springform pan. Bake at 325°F (160°C) for 10 minutes. Let cool.
  • Make the cheesecake filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and caramel sauce. Mix until combined.
  • Bake: Pour filling over the crust and bake at 325°F (160°C) for 50-55 minutes until the center is set. Let cool, then refrigerate for at least 4 hours.
  • Prepare ganache: Heat heavy cream until warm, then pour over chocolate chips. Stir until smooth.
  • Assemble the topping: Pour ganache over the chilled cheesecake, drizzle with caramel sauce, and sprinkle with toasted pecans and chocolate chunks.
  • Serve: Slice and enjoy!
