Instructions

  1. In a medium bowl, dissolve the lime gelatin in boiling water. Stir until completely dissolved.
  2. Add the undrained crushed pineapple to the gelatin and mix well. Let the mixture cool slightly.
  3. In a separate bowl, beat the softened cream cheese until smooth.
  4. Gradually add the gelatin mixture to the cream cheese, beating until well blended.
  5. Fold in the whipped topping until fully incorporated.
  6. Stir in the chopped pistachios.
  7. Transfer the mixture into a serving dish or mold and refrigerate for at least 4 hours, or until set.
