White Chocolate Coconut Truffles are rich, creamy, bite-sized confections made with white chocolate, shredded coconut, and condensed milk. These no-bake treats are perfect for holidays, parties, or gifting, with a smooth, melt-in-your-mouth texture and tropical coconut flavor.

  • 1 cup white chocolate chips or chopped white chocolate
  • 1/2 cup sweetened condensed milk
  • 1 1/2 cups shredded coconut, divided
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Whole almonds or hazelnuts (optional, for center)

Instructions

  1. In a microwave-safe bowl, melt the white chocolate in 20-second intervals, stirring after each, until smooth.
  2. Stir in the sweetened condensed milk, vanilla extract, and a pinch of salt until fully combined.
  3. Add 1 cup of shredded coconut to the mixture and stir until a thick dough forms. Chill for 30 minutes to firm up.
  4. Once firm, roll the mixture into small balls (about 1 inch in diameter). If desired, press a whole almond or hazelnut into the center of each truffle and roll again to seal.
  5. Roll each truffle in the remaining 1/2 cup of shredded coconut to coat evenly.
  6. Place on a parchment-lined tray and refrigerate for at least 1 hour before serving.
  7. Store in an airtight container in the refrigerator for up to one week.

Notes

  • For a richer flavor, toast the shredded coconut before rolling.
  • You can use coconut extract instead of vanilla for a stronger coconut taste.
  • These truffles also freeze well for up to 2 months.
