500g white chocolate, chopped
1 cup mini marshmallows
1/2 cup desiccated coconut
1/2 cup dried cranberries
1/2 cup pistachios, roughly chopped
1/2 cup rice bubbles (puffed rice cereal)
1/2 cup Turkish delight, chopped (optional)
Instructions
Line a square baking pan (8×8 inch) with baking paper.
Melt the white chocolate in a heatproof bowl over simmering water (double boiler) or microwave in 30-second intervals, stirring until smooth.
In a large mixing bowl, combine marshmallows, coconut, cranberries, pistachios, rice bubbles, and Turkish delight (if using).
Pour melted white chocolate over the dry ingredients and mix well to coat everything evenly.
Spoon the mixture into the prepared pan and press down gently with a spatula to smooth the top.
Refrigerate for at least 2 hours or until set.
Once set, cut into squares and serve. Store in an airtight container in the fridge.
Notes
You can substitute dried cranberries with cherries or mixed dried fruits.
For added texture, add crushed biscuits or candy canes.
Best served chilled and can be made up to a week ahead.
