  • 1 cup mini marshmallows
  • 1/2 cup dried cranberries or cherries
  • 1/2 cup chopped pistachios
  • 1/2 cup shredded coconut
  • 1/2 cup rice cereal or crushed biscuits (optional, for crunch)

Instructions

  1. Line an 8×8-inch square pan with parchment paper.
  2. In a heatproof bowl, melt white chocolate in the microwave in 30-second bursts or over a double boiler, stirring until smooth.
  3. Stir in marshmallows, cranberries, pistachios, coconut, and rice cereal (if using) until well combined.
  4. Pour mixture into prepared pan and spread evenly. Tap gently to remove air pockets.
  5. Refrigerate for at least 2 hours or until firm.
  6. Cut into squares and serve. Store in an airtight container in the fridge.
