Cheesy Mushroom Stuffed Bread Squares are a savory and satisfying appetizer or snack made with golden baked bread filled with a creamy, garlicky mushroom and cheese mixture.

  • 1 large loaf of crusty bread (like sourdough or Italian), cut into thick slices or squares
  • 2 cups mushrooms, finely chopped
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 cup chopped onions
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp thyme (optional)
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add onions and cook until translucent, about 2–3 minutes.
  3. Add garlic and mushrooms, then season with salt, pepper, and thyme. Cook until mushrooms release moisture and begin to brown, about 5–7 minutes. Let cool slightly.
  4. In a bowl, mix the mushroom mixture with cream cheese, mozzarella, and Parmesan until well combined.
  5. Cut out the centers of the bread squares, creating shallow pockets, being careful not to cut through the bottom.
  6. Fill each bread square with the cheesy mushroom mixture and place on a baking tray.
  7. Bake for 10–12 minutes, or until cheese is melted and tops are golden.
  8. Garnish with chopped parsley and serve warm.

Notes

  • Use a mix of mushrooms like cremini and shiitake for deeper flavor.
  • You can make the filling ahead and store it in the fridge for up to 2 days.
  • Add a pinch of red pepper flakes for a spicy kick.
