3 cups rolled oats
1/2 cup almonds, chopped
1/2 cup cashews, chopped
1/4 cup sunflower seeds
1/4 cup shredded coconut (optional)
1/3 cup honey or maple syrup
1/4 cup coconut oil or olive oil
1 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp salt
1/2 cup dried cranberries
1/2 cup raisins
1/4 cup chopped dried apricots
Instructions
Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
In a large bowl, combine oats, chopped nuts, seeds, coconut (if using), cinnamon, and salt.
In a small saucepan, warm honey (or maple syrup), oil, and vanilla extract over low heat until melted and combined.
Pour wet mixture over dry ingredients and stir to coat evenly.
