A hearty take on the classic sloppy joe featuring ground beef, tangy Mississippi-style sauce, and vibrant pepper rings baked atop soft buns—vibrant, saucy, and satisfying.

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 1 bell pepper, seeded and chopped (plus extra for rings)
  • 1 can (15 oz) tomato sauce
  • 2 Tbsp ketchup
  • 12 Tbsp brown sugar (to taste)
  • 1 Tbsp apple cider vinegar
  • 1 tsp Worcestershire sauce
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • 46 hamburger buns
  • 1 bell pepper, sliced into rings (for topping)

Instructions

  1. Preheat oven to 375 °F (190 °C). Lightly grease a 9×13″ baking dish.
  2. In a skillet over medium heat, sauté chopped onion and bell pepper until softened, about 3–4 minutes.
  3. Add ground beef; cook, breaking up lumps, until browned and no longer pink. Drain grease if needed.
  4. Stir in tomato sauce, ketchup, brown sugar, vinegar, Worcestershire sauce, smoked paprika, salt, and pepper. Simmer for 5 minutes to combine flavors.
  5. Spoon the beef mixture evenly onto the bottom halves of the buns in the baking dish.
  6. Place a pepper ring on each bun top.
  7. Bake uncovered for 10–12 minutes, until buns are warmed and sauce bubbles.
  8. Remove from oven, top buns, and serve immediately.

  • Add shredded cheddar or pepper jack for a cheesy version.
  • Use poblano or banana peppers and cayenne for extra heat.
  • Substitute ground turkey or chicken for a leaner version.
